Out of all the main criticisms levied against the Star Wars Prequels, which one would you say holds the least weight/is most easily defendable and why?

Definetely Jar Jar Binks. This early foray into multiculturalism was not appreciated. Fans are just incels.

For real though, I think the Jedi's highly authoritarian and ignorant behavior in the prequels is somewhat misunderstood. I'm not sure if those were Lucas's intentions, but I think stuff like the Council shitting on Anakin or jobbing at finding out about the plot to destroy the Jedi Mace Windu constantly sensed is supposed to show the decay and corruption of the Republic pre Empire. Much like the Medieval era Curch, the Jedi went from being and insititution that promoted peace to an office of lazy jerkasses. Their years as basically a closed cult made them forget their principles and fall in contradiction, as shown with the Council fearing possession and attachment because... It would instigate fear of loss?

The old Jedi Order was corrupted so the prophecy would work: They were corrupted and weakened to a point they couldn't see Palpatine's machinations right under their noses, leading to the destruction of the Jedi Order and Republic as a whole so, years later, a new unbiased Jedi Force would rise with Luke (As shown with Episode VI's title - "Return of the Jedi"). That is, until the sequels came and made Luke even worse than his predecessors, trying to kill his nephew out of fear of the dark side.

Anyways, I gotta watch those movies again. Always wanted to watch the series in chronological order.

Indeed they were, given how Lucas reinforced the idea in The Clone Wars; of which he had a key role when it came to approving ideas, in which the idea of the Jedi's flaws and how their lack of attachment drove Anakin further away from them throughout the Clone Wars is made even more apparent. Low-key plug for you to complete The Clone Wars.

Do you believe Anakin's arc in Attack of the Clones/Revenge of the Sith is as bad as most say it is, or do you believe some parts of it are primarily misunderstood?

[mention]Captain Cadaver[/mention] A bit of both. While a lot of things were indeed jumped in the 10 years timeskip, it’s pretty understandable why he’d get pissed off at the Jedi for treating him so unfairly, though not enough for him to pull a 180 and kill a room full of kids.

There’s actually a theory that Anakin suffers from Borderline Personality Disorder, thought it’s only a theory rather than something that’s hinted by Lucas.

The "Racial Coding" section of the video towards the end borders on being an SJW rant, but the rest of it is an excellent breakdown of how TPM's characters, narrative and direction are severely underrated.
